Vegetarian/Two Bean Chili

Dr. Erin's Two Bean Chili (Dr. Shepherd's Office) Ingredients
    * 1/2 pound sliced fresh mushrooms
    * 1 large green pepper, chopped
    * 1 large sweet red pepper, chopped
    * 2 celery ribs, chopped
    * 1 medium onion, chopped
    * 1 jalapeno pepper, seeded and chopped
    * 1 tablespoon olive oil
    * 4 garlic cloves, minced
    * 1 teaspoon dried oregano
    * 1 can (28oz) diced tomatoes, undrained
    * 1 can (16oz) red beans, rinsed and drained
    * 1 can (15oz) black beans, rinsed and drained
    * 1 large carrot, chopped
    * 1/2 cup water
    * 1/2 cup BBQ sauce
    * 1-2 T. chili powder
    * 1 teaspoon liquid smoke (optional)
In a large skillet over medium heat saute mushrooms, peppers, cilery, onion,
    and jalapeno in oil until onion is slightly browned. Add garlic, cumin,
    oregano. Continue cooking and stirring for 2 min. Transfer to 5 quart slow
    cooker. Stir in tomatoes, beans, carrot, water, BBQ sauce, chili powder,
    liquid smoke. Cover and cook on low 8 hours or until veggies are tender.
    1 1/3 cup serving = 185 calories, 3g fat, 32g carbs, 10g fiber, 9g protein.
