  • 0.50 cup partially clarified butter
  • 1.50 lbs yellow and white onions
  • 1 cup dry white wine
  • 4 sprigs thyme
  • 2 bay leaves
  • 2 tbsp peppercorns
  • 5 clove garlic
  • 5 tbsp parsley
  • 12 cup chicken stock
  • 0.25 cup dry sherry
  • 1 salt and pepper to taste
  • 0.25" thick French bread to fit crocks
  • 6 cup grated Gruyere cheese
