| A: | 2T butter |
| B: | 8 slices pumpernickel bread |
| C: | 10oz tempeh (pressed soy), sliced 2mm thick strips |
| 1C dry sauerkraut | |
| 3T thousand island dressing | |
| 4 slices swiss cheese | |
| 1. | Melt (A) in skillet, place 4 slices (B) in skillet. |
| 2. | Top with (C): cheese, tempeh strips, dressing, sauerkraut. |
| 3. | Top with remaining 4 slices bread, cook covered over low heat 4 minutes. |
| 4. | Flip sandwiches, cover and cook 3 minutes. Serve. |
