Preparations/Chocolate Fondant
A: 6C confectioner sugar
5oz water
2T light corn syrup
B: 3oz unsweetened chocolate, chopped
1t almond extract
1. In a saucepan, combine (A). Cook over low heat, stirring constantly, until
it reaches a temperature of 92F.
2. Remove from heat and add (B). Stir until smooth.
