Meat/Apricot Grilled Chicken
A: 4 Boneless chicken breasts
B: 1/4C apricot juice or nectar
1/4C apricot jam
1T lemon juice
1T Dijon mustard
4T brown sugar
1/2t ground cumin
salt and pepper to taste
C: Diced tomato
3 canned apricots, diced
1/4 cucumber, minced
green onion, chopped
2T lemon juice
1T canola oil
1. Grill (A) with glaze (B) over low flame. Turn many times and coat to build
up a thick coating of glaze.
2. Combine (C).
3. Top (A) with salsa (C) and serve.
