Fish/Scallops And Spinach

A: 4c garlic, minced
    1/4C onion, minced
    1/2C butter
B: 1C heavy cream
C: 1 1/4# spinach, stems removed
    1t salt
    1t nutmeg
    1/2t pepper, ground
D: 1/4C Parmesan cheese, grated
    1 1/4# bay scallops, rinsed
    2C pasta shells, cooked al dente
E: 1/4C Parmesan cheese, grated
1. Saute (A) in pan until translucent. (Optional: add spinach stems)
2. Add (B), simmer until reduced by half (~5min).
3. Add (C), raise heat to high and heat through.
4. Add (D), mix, pour into baking dish and sprinkle (E) on top. Bake at 450F
    about 12 minutes until scallops are cooked.
